Gluten Free Vegan Mug Cake

You might have guessed it by the vast number of food related post cropping up, I like food...I like eating it and I especially like making it. I get great joy out of recipe testing new and exciting desserts but sometimes I just don't want to wait for them to bake in the oven! I therefore couldn't resist trying a new recipe for a quick and easy mug cake!

I first found the perfect mug cake recipe when stumbling upon Carrie's blog WishWishWish, if you're looking for a non vegan / non gluten free version, I highly recommend this one! I've tailored Carrie's recipe slightly to enable this to be both vegan and gluten free

2 tablespoons of melted coconut oil
3-4 tablespoons of coconut sugar (depending on how sweet you like it)
4 tablespoons of gluten free flour (I like to use buckwheat)
2 tablespoons of cocoa powder
3 tablespoons of unsweetened almond milk

1. Mix everything together in a microwavable mug
2. Place the mug in the microwave on high heat for just under 1 minute
3. Blast it for a little big longer if it still looks too gooey

This recipe is all about trial and error with the time in the microwave, mine works best at just under 1 minute, perfectly cooked but still moist inside!
