Vegetarian Chorizo Spice

I always like to challenge myself when it comes to cooking and whilst eating vegetarian I was stumped on how to make a dish with a chorizo tasting spice. I searched around online and ended up pulling a few recipes together to make my own.

Vegetarian Chorizo Spice - Enough for a spicy meal for 4
1 tbsp cumin seeds
2 bays leaves
1/4 tsp ground cinnamon
1/2 tsp oregano
1/2 tsp thyme
1 tbsp granulated garlic
1 tsp sea salt
1/2 tsp ground black pepper
2 tbsp paprika
1/2 tsp of hot chilli powder
3 tbsp apple cider vinegar

1. To make the paste add the dry ingredients to a pestle and mortar and grind to a fine dust
2. Add in the apple cider vinegar until it forms a thick paste
3. Or, if you're a bit lazy like me, add all the ingredients into a coffee grinder / spice grinder and blitz until a paste forms.

I used my vegetarian chorizo spice in the below dish

Feeds 2 - Mild Spicy Tomato, Spinach and Mozzarella

1 red onion finely diced
2 yellow peppers finely diced
250g cherry tomatoes cut in half
4 big handfuls of spinach leaves
1 ball of mozzarella (leave out if making the dish vegan)
Sprinkle of pine nuts
1/4 - 1/2 of the vegetarian chorizo spice (depending on how hot you want it)

1. Fry the peppers and onions until soft
2. Add the vegetarian chorizo paste and mix
3. Add in cherry tomatoes then 4 big handfuls of spinach leaves
4. Once the spinach has wilted, turn off the heat and add the mozzarella and stir
4. Plate up and then sprinkle pine nuts on top
