Malteaser Cookies

I love cookies. I love making cookies. I love eating cookies and I LOVE sharing recipes for cookies.

I found this recipe by Cath Kidston in the Sunday paper one day and thought, Cath is an amazing lady who makes beautiful designs and homeware...she seems like the kind of lady who would enjoy a beautifully tasting cookie too, why not give her recipe a go?

So I did and I liked it!

The Recipe - makes 6 cookies

160g of unsalted butter
125g of soft light brown sugar
50g of caster sugar
2 medium eggs
200g of plain flour
175g of Horlicks
1/2 tsp of bicarbonate of soda
A pinch of salt
150g of Malteasers roughly crushed
50g of milk chocolate chopped

Preheat the oven to 180 degrees/ 160 degrees fan / gas mark 4.
Line 2 baking trays with parchment paper
Beat the butter and sugars together until light and fluffy
Gradually add in the egg
Fold in the flour, Horlicks, bicarb of soda and salt to form a sticky but firm dough
Stir in the Malteasers and chocolate
Split the mixture into 6 balls
Line the balls onto the baking trays so they are spaced 8cm apart
Bake in the oven for 10-12 mins until golden
All the cookies to cool for at least 5 mins before transferring to wire rack

I would personally add a bit more chocolate and some more Maltersers to the recipe to give it that extra something something but overall this recipe had a thumbs up from me!
